Today is Pancake day!!!
I have been working like crazy today as am launching my new Swimwear collection in a few weeks for KimberleyLondon
The bikinis are designed, the fabric is in the factory, the shoot is done and all is on its way…
I honestly only realised it was pancake day at 9m when I saw on twitter, so I thought it was time to pack it in of the night.
I never have much in the fridge, apart from a few simple things.
After a very late night and far too much dancing a few weeks ago a bunch of us found ourselves raiding my fridge for a 5 am snack… when I learn how to make THESE!
They are so unbelievably delicious, and the fluffiest pancakes ever… however heres the catch… they are actually good for you!
Ingredients :
2 Bannas
2 Eggs
Pinch of cinnamon
Olive oil for cooking
Syrup/honey
Literally just mush up the Bananas and Eggs together until smooth and add a big pinch of cinnamon.
Heat up the frying pan with a little olive oil, and spoon in the mixture into little pancakes, keep them small, they are easier to flip :)
When golden each side serve up with Maple Syrup (my favourite is Aunt Jemmimas - you can get it from Partridges in London) or even Nutella… or if feeling super healthy they are even delicious on there own!
I have honestly eaten these every day for the past few weeks, they are so healthy and really yummy!
