Last Days Of Summer & Home Cooking

Posted by Kimberley Garner on

Where has this rain come from! Literally a few weekends ago it was still warm and sunny,

and I was convinced that England was going to give winter a miss this year... I was wrong.

Rain pouring down outside and the fire on, I thought I would put up a little food blog post from two weekends ago.

I find weeks in London really busy, so try to get away over the weekends.

My family have a place in Buckinghamshire  on the Thames about 40 minutes drive west of London.

Late afternoon we headed to Danesfield for cocktails and to explore the grounds.

It is a big hotel, but is actually more like a old english castle.

It's so beautiful.

I even heard rumors that (another one) of George Clooney's wedding celebrations is going to be held there...
it really is like a princess castle.

We wandered round the grounds and drank far too many cocktails.

We then headed home for a cosy movie night, and I decided I was going to cook...

One of my favourite restaurants in London is Hakkasan, they do this amazing duck salad.
This is my own version, its much easier to make...

INGREDIENTS:

1 half Pekin duck from the supermarket (Waitrose do a great one in the Chinese food section, it comes with yummy plum sauce and you just pop it in the oven)

1 avocado, sliced into cubes

2 handfuls of cherry tomatoes sliced

1/4 a watermelon sliced into cubes

1 bag of rocket or lambs lettuce salad

INSTRUCTIONS:
Roast the Pekin duck (follow instructions on the box)
Mix in the plum sauce sashay into the rocket in a big salad bowl
Toss in the chopped avocado, tomatoes and watermelon
Once the duck is cooked, use two forks to shred the meat off the bone, and toss into the salad too

Serve and enjoy : )

I also made some yummy noodles to go with it...

INGREDIENTS:
1 pack of fresh egg noodles
1 pack of oyster mushrooms
2 pac choi
2 spring onions
Soy sauce and oyster sauce

INSTRUCTIONS:
Chop up the mushrooms, spring onion and pack choi in to small/medium pieces
Heat the frying pan, or wok, with a  little bit of olive oil or sesame oil
Fry the chopped ingredients on a low heat for a few minutes
Toss in the egg noodles, add soy, and oyster sauce
Cook for about 5 minutes, serve hot

Its a really easy, yummy and healthy recipe.
If you try it yourself please let me know how it goes? @KimberelyLondon
